Chef Morris Danzen returns to PH to promote Filipino cuisine through global culinary collaborations

FILIPINO chef and culinary entrepreneur Morris Danzen is returning to the Philippines this August for a series of culinary collaborations aimed at showcasing Filipino flavors, strengthening international partnerships, and promoting local ingredients to a global audience.

Danzen, founder of CMD Supper Club, has built a reputation in Australia and abroad for creating dining experiences that highlight Philippine cuisine while fostering collaborations among chefs, artisans, food producers, and local communities. His advocacy centers on using food as a platform to preserve Filipino heritage and connect cultures.

“Every collaboration is an opportunity to share a piece of the Philippines,” Danzen said. “Whether it’s a local ingredient, a shared meal, or a cultural exchange, I hope people leave with a deeper appreciation of who we are and what Filipino cuisine has to offer.”

His Philippine tour will feature several events highlighting regional flavors and culinary innovation.

This August, Chef Morris returns to the Philippines for a series of collaborations that celebrate creativity, craftsmanship, and regional flavours.

His tour includes Sud South, a collaborative dining experience with Chef Miggy Moreno of Cabel, exploring the culinary connection between Southern Mindanao and Southern Sicily under the theme “Different Cultures. Same Seas. Shared Stories.”

Danzen will also participate in the Siargao Food & Wine Festival, where he will join fellow chefs, producers, and tourism stakeholders in promoting Philippine gastronomy.

Organizers said the festival seeks to establish Siargao as one of the country’s emerging culinary destinations by showcasing local produce and encouraging partnerships within the food and tourism sectors.

During the festival, Danzen will demonstrate how premium Philippine ingredients, particularly calamansi, can be transformed into products with international appeal.

His visit will conclude with a hands-on culinary collaboration at Artisano Studio, where participants will learn handmade pasta-making techniques that blend traditional Italian methods with contemporary Filipino flavors.

Guests at the events will also be introduced to the CMD x Stache House Calamansi Liqueur, a collaboration with Australia’s Stache House Beverage Co. that highlights the versatility of calamansi as a premium spirit ingredient.

Danzen has earned international recognition for his culinary achievements. In 2020, he won the Gino Cerca Chef Championship in Italy after competing against hundreds of professional and amateur chefs.

More recently, the CMD x Stache House Calamansi Liqueur received a Silver Medal at the 2026 Melbourne Royal Australian International Spirits Awards, underscoring the growing global appreciation for products made with authentic Philippine ingredients.

Beyond competitions, Danzen has worked with the Center for International Trade Expositions and Missions (CITEM) and has served as an IFEX Kitchen Culinary Champion at IFEX Philippines, where he promotes Filipino producers and culinary innovation to international markets.

Through his continuing collaborations in Australia and the Philippines, Danzen hopes to further elevate Filipino cuisine, create new opportunities for local food producers, and inspire more chefs to bring Philippine flavors to the world stage.
